Tomatoes, cucumbers and mozzarella cheese skewered together and drizzled with balsamic vinaigrette. Great appetizer.

Ingredients

1 Cucumber, peeled, deseeded and sliced 1/2"
1 pt. Cherry Tomatoes
1 pkg. Mozzarella Cheese, cut in 1/2 inch sections
2-3 oz. Fresh Basil
Balsamic Vinaigrette

Directions
Step 1  Step 1:
On the skewer: alternate 1 cucumber piece, 1 cherry tomato, 1 piece mozzarella, 1 more cherry tomato, and 1 more cucumber piece on each skewer. Arrange the brochettes on a platter, drizzle with the Balsamic Vinaigrette and garnish with fresh basil.
 
Step 2  Tips:
You can use larger fresh mozzerella balls cut into bite-sized pieces. And for a more intense flavor, you can marinate the brochettes in the Balsamic Vinaigrette instead of just drizzling. Take out of marinade just before serving and sprinkle with chopped fresh basil.
